Wild Earth Rose 2008
Pinot noir juice enjoyed a single day’s skin contact before being drained to a single, small tank for fermentation. The juice was innoculated and the must underwent a cool fermentation, where temperature was controlled over a period of time. Fermentation was stopped by chilling in order to
balance the natural acidity with residual sugar. The wine was clarified using isinglass and then filtered in preparation for being bottled in September.
Aromatic and Palate Comments
A dark salmon pink wine, with delicious crushed strawberry and delicate spice flavours that are beautifully balanced by refreshing acidity. It offers a hint of fruit sweetness and creamy texture, with an attractive, lingering finish.
