Toolangi Pinot Noir 2008

This Pinot Noir fruit was gently destemmed without crushing, with whole bunches added to several of the fermenters. Skins and fermenting wine were hand plunged each day, with pigeage occurring towards the end of fermentation. Wines were pressed at dryness and transferred to a mix of new and used barriques for MLF and maturation on lees. The wine remained undisturbed till blending and bottling in January 2009.

TASTING NOTE

Colour: Medium red, bright edge.
Nose: Engaging Pinot fruit nose, shy at first but opens to reveal red currants, cherry and complexing earthiness.
Palate: Red fruits and cherries follow onto the front palate. Bright and textured, the flavours of plum and cherry pip are finished with cleansing acidity. Extract is fine and in perfect balance with the fruit. Beautiful drinking in its youth, this 2008 Pinot Noir will certainly show more complexities with time in the bottle.
