Toolangi Estate Chardonnay 2007
Fruit was hand and machine picked on the 28th of February and pressed to tank for chilling. Following two days cold settling the juice was racked and warmed retaining some of the grape solids to add complexity to the wine. Some parcels were allowed to ferment with indigenous yeast in barrel whilst others were inoculated with EC-1118 and CY3079. Primary fermentation was completed after approximately 2 weeks. No malolactic fermentation was carried out on this wine and elevage occurred over 11 months in French Oak barrels and puncheons.
TASTING NOTE
This wine is almost without equal in the realms of purity of fruit and quality of oak. It offers intensity of flavour, dominated by salted cashews, browning toast and savoury precise fruit. Full ripe melon and fresh notes of herbs on the nose, the Toolangi Estate has a wonderful balance of full flavour, fresh acidity and stony minerality which draws the wine along your cheeks and creates terrific length and ageing potential. There is also straw, nougat and a hint of honey, all somehow packed into this powerhouse of a wine. Despite obvious, hallmark Chardonnay character, all the elements of this wine remain fine and delicate. Totally satisfying, this is arguably the benchmark for Chardonnay in Australia today.
