Serafino Shiraz 2006
The fermenting must was racked and returned 3 times to maximise oxygen exposure. At 3.5 Baume we pressed the must straight to new and 1 year American and French Oak to complete primary fermentation. The wine was racked and returned 4 times from oak, over an 18 month aging period.
TASTING NOTES
Aroma: Subtle vanilla/cedar oak, mulberry, chocolate, spice and Satsuma Plum.
Colour: Black/purple.
Palate: dark chocolate, black prunes, pepper, licorice and spicy cedary oak
This well structured wine is approachable now, however has the power and concentration to guarantee longer term cellaring up to 10 years under the right conditions.
Enjoy the experience with a juicy rump, carpet bag steak or any barbequed meats.
