Serafino Reserve Chardonnay 2007

The grapes were harvested at 13.5 Baume, with flavour compounds peaking. Harvesting takes place in the cool morning hours. Soon after harvest the grapes are pressed and the juice settled for 36 hours. With no use of enzymes the juice is racked and cloudy which aids fermentation and increases complexity. After fermentation in tank to 9 Baume the juice is chilled to 10 degrees and transferred to 100% French oak, 70% new and 30% I year old, which is a combination of Troncais, Never, Perle Blanche and Marsannay of Burgundy. Fermentation is completedin the Barriques and matures on lees with regular batonagefor 9 months. Only 600 cases produced.

Tasting Notes

Aroma: intense peach, cashew, citrus and honeydew melon.

Colour: Pale straw.

Palate: Chablis like orange peel and intense lime flavours, a fruit driven flinty style which has exceptional length and freshness on the finish.

A beautifully balanced wine drinking well now or will develop richness and complexity with correct cellaring.
