Rapaura Springs Pinot Noir 2008
Fruit was sourced from a number of vineyards within the Marlborough region to ensure that only the highest quality grapes were used to achieve a true representation of Marlborough Pinot Noir. The fruit was hand selected in small parcels over a number of days. This allowed each block or even part of a block to be harvested at optimum levels of ripeness and flavour.
The fruit was gently destemmed and put in small tanks for batch fermentation using gravity techniques. A period of cold soaking the fruit to extract the flavours of the grape was followed by natural fermentation using wild yeast to build complexity into the wine and to carry through the winemakers philosophy of minimal intervention. After a period of two to three weeks on skin the wine was gently pressed in small batches and matured in a mix of new and used French oak barriques for 9 months before being carefully blended and lightly filtered before bottling..
Tasting Notes
The 2007 Pinot Noir has a pure and complex aroma of black fruits with complex savoury notes of leather and tobacco. The palate is rich and complex, with excellent fruit structure and length. The oak is finely balanced with ripe fruit tannins and a silky, elegant finish. The 2007 Pinot Noir will further develop in the bottle for your enjoyment over the coming years.
Food Matches
The complex character of this wine makes it highly suitable for meat and game dishes. Try with wild venison, lightly sealed with rosemary for a quintessential Marlborough regional experience.
