Bendigo Cabernet Sauvignon 2006

The Bendigo region has established a reputation as the source of some of Victoria’s best red wines. Warm to hot days along with cold nights and a dry climate make it very suitable for most red grape varieties. This Cabernet Sauvignon is certainly evidence of that. Using drip irrigation, the vineyard manager is able to control both the quality and quantity of the grapes in most conditions.

2007 was another hot and dry season and yields were below average but generally better than anticipated, and the fruit quality is excellent.

Tasting Notes

Aroma: Lifted aroma of pear and tropical fruits with traditional Sauvignon cut grass notes. Fresh but not overbearing.
Aroma: A lifted bouquet of cassis and aniseed precedes.
Palate: sweet winter fruits, blood plums and blackberries.

Structure: Good acid structure and chalky tannins complete this delicious package.

This wine is best enjoyed with red and game meats such as light lamb dishes or cold beef salad and is ideal for immediate drinking and short to medium-term cellaring.
